In August 2001, the long-held dream of Chef Aoki was realised, his own restaurant in Bridport Street, Albert Park, named Eis (Eis is the phonetic alphabet of the word Ace). His passion for food and everyday life is displayed in his simple and elegant design of the menu. He believes that elegant and refined food is possible in Japanese cuisine, and this relies on a chefs training and creativity, technique, ingredient, freshness of produce and presentation on the plate.The interior and re-branding of Eis is created by award-winning architect, Architects EAT, who was responsible for the design of Maedaya Bar which won the 2008 Interior Design Award for hospitality interior.
